Open on Saturday mornings throughout the market season

Located on a picturesque farm in Ste. Genevieve, MO, the Baetje's rise at 3 a.m. every morning to milk 53 goats and then spend hours each day turning that milk into several different French inspired cheeses including:

Coeur de la Creme: a heart shaped fresh cheese handcrafted and seasoned with a variety of fresh dried organic herbs including garlic and chive, dill, 3 pepper, herbs de provance, and plain.

Coeur du Clos: s a soft-ripened cheese inspired by camembert and made with wholesome unpasteurized milk and aged 60 days. You can't find real unpasteurized cheese like this much outside of France.

Fleur de la Vallee: a hard washed rind cheese aged anywhere from 3-8 months. It is in very limited quantity.

Bloomsdale: This cheese won 2nd place in the 2008 American Dairy Goat Association National Contest. Inspired by Valencay. It is a mold ripened cheese and is rolled in a mixture of ash and salt. As this cheese ages it becomes progressively softer to the point of runniness. The cheese at that point takes on some blue cheese flavor compounds. Some customers prefer it that way and use it as a savory sauce for grilled steak.
